Here are some tasty ways to feature Carlton Farms on your table, with recipes for some of our own favorites and dishes from great chefs.


The only secret to making these tender, fall-off-the-bone ribs is just how easy they are make.

SERVES 6
PREPARATION TIME: 3 1/2 hours
3 racks Carlton Farms pork baby back ribs
1/4 cup water
Papa Jakes Gourmet Spice
1 Tbsp Wright's Natural Hickory Seasoning
(liquid smoke)
12 oz bottle BBQ sauce

1. In a shallow baking pan, pour water and liquid smoke, stirring to mix. Rub Papa Jakes on both sides of ribs and coat lightly with BBQ sauce. Place ribs bone side down in baking pan and cover tightly with foil. Bake in 250° oven for two hours.

2. Remove pan from oven, discard foil and pour off liquid. Place ribs bone side up and coat each side with half remaining BBQ sauce. Bake uncovered at 325° for 30 minutes. Turn ribs over, brush with remaining BBQ sauce and bake for 30 minutes.


When the outdoor grilling season arrives, there's nothing better than a savory pork chop served with grilled garden vegetables.
SERVES 4
PREPARATION TIME: 30 minutes
4 each Carlton Farms pork chops
1/4 cup butter, softened
1 Tbsp molasses
1/2 tsp freshly squeezed lemon juice
1/3 cup whiskey
1/2 tsp salt
4 Tbsp coarsely ground black pepper

1. In a small bowl, whisk together butter, molasses and lemon juice. Cover and refrigerate.
2. Combine the whiskey and salt together in a small bowl and place pepper in a separate bowl. Dip both sides of each chop in the whiskey mixture and then coat evenly with pepper.
3. Place over medium-hot coals, close lid and grill for 6 - 8 minutes. Turn and grill for
6 - 8 minutes more. Top each chop with a spoonful of molasses butter and serve.
For oven preparation,
broil each side for 6 - 8 minutes until internal temperature reaches 160°.
